Instant Pot Cajun Goulash

This is a simple, quick, and delicious meal when you’re craving something hearty, but not too heavy. You can use ground beef or turkey. I’ve made it with both, and with the bold flavor, you honestly cannot tell a difference. You can also adjust the amount of cajun and cayenne seasoning depending on the amount of heat you want. Mine was far too spicy the first time I made it. The second time, I used a bit less, and figured we could add some cajun to our individual bowls if we wanted a bit more heat. You could leave the cajun out, or use a very small amount if you don’t like spice at all! Also, you can swap out the bell peppers for whichever color you’d like. I don’t like red peppers, so I typically use green, orange, and yellow.

Ingredients

  • 2 tbsp of salted butter
  • 1 each of red, green, and yellow bell pepper, diced
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1.5 lbs of ground beef or ground turkey
  • 1 tbsp of minced garlic
  • 1 28oz. can of tomato sauce
  • 1 cup of chicken broth
  • 2 cups of elbow macaroni
  • 2 tsp of cajun seasoning
  • cayenne pepper for serving

Instructions

  1. Turn IP on saute mode. When display reads “hot”, add butter, bell peppers, onion, garlic, salt, and pepper. Saute for a few minutes to soften peppers and onions. Add ground beef (or turkey).
  2. Stirring, cook until beef is browned, about 5 minutes. Add tomatoes, broth, pasta, and cajun seasoning. You can push the pasta down into the liquid, but don’t stir. If the pasta hits the bottom of the pot, it may burn.
  3. Place the lid on the pot, making sure the vent is sealed. Cook on manual, high pressure for 4 minutes.
  4. When pot is finished cooking, turn valve to vent and release pressure. Once the pin drops, open the lid and stir to combine pasta. It may be a bit thin when you take the lid off, but the pasta will absorb most of the liquid.
  5. Sprinkle with cayenne, if desired.

**When reheating this dish (and any dish with pasta or rice), I place a splash of water in the bowl, and a wet paper towel over the bowl, so the pasta doesn’t dry out. This creates steam to make sure the pasta stays fluffy!
